You may be asking if the title is right of this blog. Yes, it is.

 

Fried pork rinds or Pork scratchings or Pork Crackling (in the UK) is a snack -- I bet most of people know this.  In Western World, this fried pork rinds is good with Beer (same as in Thailand).  More of that the fried pork rinds or 'Kaeb Moo' is know in Thai Cuisine especially in Northern Thai Dishes.

Keab Moo is always served as one of the Northern Thai dishes selection  Thai people often eat it together with chilli pastes namely 'Nam Phrik Num' - made with grilled green chilli pepper, 'Nam Phrik Ong' - made with dried chilli peppers, tomato, and minced pork.  Even can be accompany with 'Som Tam' - Thai papaya salad or even 'Noodle dishes'

Another way to enjoy is as snack which Thais normally eat it with 'Nam Chim' or dipping it with sweet chilli paste and lime juice.

How to make it ?

Basically it need to be salted and hung dry in the sun.  Then it will be sliced and deep-fried twice.  The last deep-frying you can see the fat cells expanding which will result the 'puffed skin' after cooking.

Looking at the instructions they state to remove the inner paper bag and to carefully read the instructions on it… I'm not great with instructions, as I'm more an attention span deficit kind of person. so I'm hoping the instructions are not long and I don't dose off reading them. Specifically not putting the plastic wrapper in the microwave seemed very important though. So here goes…

Taking the paper bag out from the plastic bag then putting in microwave for 1.5 - 2.0 minutes (depends on your watt).  The bag will be expanded (however, no poping sound such as Popcorn).

After taking out from microwave, just leave it cool down ... then you can tear the bag which you will see the freshly baked crispy pork rinds inside like this ... of course, it was claimed to be 'low fat crispy pork rinds'.  Moreover, it has to be longer shelf-life as normal crispy pork rinds is only 7 days while Kappy can last long 60 days in room temperature (or even 6 months if in fridge).
